The lack of knowledge about the current industrial inspection legislation affects the food safety and promote informality in the food chain. In this sense, the present study aimed to describe the public policies for food safety in Brazil, as well as aspects of food safety that permeate the official inspection services, through a bibliographic review of the food hygiene legislation and scientific articles. From this work, it can be concluded that the sanitary legislation in Brazil has undergone several changes due to the increased production and export of animal products. It is still necessary regulate the artisanal production in order to understand and delimit the handmade process, without leaving doubts or gaps in what may affect the safety of food.
