This study aimed to evaluate the effectiveness of the implementation of good manufacturing practices by veterinary medicine professionals in a production/industrialization establishment of products of animal origin. In this context, in a processing unit of meat and meat products that fractionates products, a diagnosis was made of the sanitary hygienic conditions of the establishment, implementation of GMP's and evaluation of the effectiveness was made using the checklist provided in RDC no 275. The establishment was in accordance with 53.6% of the items, and after GMP's application showed the improvement of 83.2% of attendance to the items on the list, therefore, it was observed the importance of the technical responsible qualified in veterinary medicine in the process of adequacy of the establishment, added to the autonomy given by the owner and the sensitization of employees to follow up good practices, enabling the supply of quality products with the guarantee of a safe food for consumers.Acesso AbertoBoas Práticas de Fabricação.
